Pumpkin Spice Pancakes

Based on a recipe by Veganista

Serves 2 hungry people.

1 1/4 c. spelt flour

3 T. coconut sugar

2 t. baking powder

1/2 t. cinnamon

1/4 t. nutmeg

1/8 t. cloves

1/2 c. pumpkin puree

1 1/4 c. almond milk

1 t. vanilla

In a medium size bowl, mix flour, sugar, baking powder, and spices. Add in pumpkin puree and milk. Mix well.

Heat a nonstick griddle on medium high heat. Once hot enough, place batter (in size of pancake you would like to eat) on griddle. Cook until bubbles come up and the edges dry. Flip and give them a minute or two more time.

Serve with whatever fixin’s you desire. I love pecans, chocolate chips, coconut flakes and syrup.
