Based on a recipe by Minimalist Baker

1 chia egg (1 T. chia + 3 T. water)

1 T. coconut oil (melted)

1 T. maple syrup

1 t. baking powder

1/2 t. baking soda

1/8 t. salt

1 c. almond milk (room temperature)

2 T. oats

1/4 c. whole wheat flour

3/4 c. spelt flour

Make chia egg by combining chia seeds and water in a small bowl. Let sit for a few minutes. In a medium size bowl, combine flours, oats, baking powder, baking soda, and salt. Combine almond milk, maple syrup, coconut oil, and  chia egg and then add this liquid mixture to the dry ingredients. Stir until just combined. Cook on a nonstick griddle.
