Macaroni and Cheese (Nut Free)

1 box of noodles (your choice)

1-2 c. broccoli florets

cheese sauce (recipe below)

buffalo sauce

Make cheese sauce. Video and recipe below. Make noodles according to package directions, putting broccoli into the water along with the noodles you are cooking. After draining noodles/broccoli, place in a casserole dish. Pour on as much of the cheese sauce as desired. Stir it all up. Serve with a drizzle of buffalo sauce.

Cheese Sauce

2 c. potatoes (peeled and cut into chunks)

1 c. carrots (cut into chunks)

1/3 c. extra virgin olive oil

1/2 c. water

1 t. salt

1/2 c. nutritional yeast

1/2 t. garlic powder

1/2 t. onion powder

Boil the potatoes and carrots until tender (20 minutes or so). Drain. Place in blender. Add all other ingredients. Blend until smooth, scraping down sides as needed. Place in a sealed container and store in refrigerator. Put on EVERYTHING. (Well, maybe not chocolate, but put on pretty much everything else.)
