Cinnamon Roll Baked Oatmeal

Recipe slightly modified from Chocolate Covered Katie.

1/2 c. old fashioned oats

1/4 t. vanilla

1/2 t. cinnamon

2 T. maple syrup

1/4 c. cinnamon applesauce

1/4 c. almond milk

walnuts (optional)

frosting (see below…NOT optional…takes it to a whole new level…you’ll love it)

Preheat oven to 375 degrees. Combine all ingredients in oven safe bowl. Bake for 15 minutes. Cool slightly and then top with Cream Cheese Frosting and sprinkle with walnuts.

Cream Cheese Frosting

1/2 c. vegan cream cheese

1/4 c. silken tofu

2 T. maple syrup

Throw this all into a mini blender or food processor and blend or process. You know, depending on your mixer of choice.
