Baked Tofu

14 oz. extra firm tofu

olive oil

sea salt

Remove tofu from package. Press tofu. A tofu press is ideal, but if you are not the proud owner of a tofu press, you can simply wrap the tofu in a clean dish towel then balance a couple of books on top. Press the tofu for at least an hour. Cut the tofu into cubes. I aim for 32 cubes. Next, place cubes in baking dish. Drizzle with oil and salt. Roll them around a bit, so every side is happily coated in oil and salt. Bake at 425 degrees for about 30 minutes, or until both sides are golden brown. Flip cubes halfway through baking time.
