It’s been fun.
But I guess all good things must come to an end. I need to come to terms with the fact…it’s over.

Goodbye morning workouts when the sun is above the horizon.
Goodbye leisurely walks with my favorite squirrel chasing canine.
Goodbye reading a Karen book on the front porch in the middle of the afternoon. (Can’t wait to share my thoughts on this one btw!)
It’s time to move on.
It’s time for…
Well, it’s time for packed lunches for one thing.
Luckily I have a few ideas in mind. Like this salad for instance. I’m not sure where the recipe came from, or if I am actually even following a recipe. It resembles the detox salad found at Whole Foods, and is super simple to throw together. (Providing you have a food processor…if not, it’s simplicity depends on your ability to chop vegetables.)
End of Summer Salad
(Serves a boatload.)
2 bunches (heads?) of broccoli, stems removed, and finely processed or chopped
1 head cauliflower, finely processed or chopped
6-8 carrots, shredded
parsley, chopped, about 1 handful
1 cup raisins or currants or a combination of the two
1/2 c. sunflower seeds
juice of 2 small lemons
maple syrup, a drizzle
Combine all ingredients. There. That wasn’t difficult.
Keep covered in the refrigerator.
