PB and Chocolate Chia Oatmeal

Yesterday I decided there would be no “false sense of health”. Therefore, I spurned medicine, and spent the majority of the day on the couch in my sweats, wrapped in a blanket, drinking copious amounts of tea. I was going to win this battle.

I blew off God (okay, that sounds worse than what it was…I stayed home from church, and prayed for forgiveness), and ignored feelings of guilt about not working out, or getting any housework or schoolwork done. This was not easy for me.

My breakfast of ice cream (just in case you missed it, click here), was followed by leftover lentil soup for lunch, a Sumo orange (OMG!!!…these are incredible) for a snack, and more green tea. My stomach was telling me EAT! My throat was telling me don’t you dare! (So I did what I could.)

For supper I managed to put together this meal:

I was in bed by 9:00, and sleeping soundly by 10:00.

And this morning? I woke up feeling like a million bucks! Okay, I obviously have been teaching figurative language of late. Maybe ten dollars would be more accurate. At any rate, I felt much improved from the previous 48 hours!

I was then inspired to make something indulgent, yet filling, for breakfast to celebrate my newfound health. And this is what I came up with:

This turned out quite tasty indeed!

PB & Chia Seed Oatmeal

(serves 1)

1/3 c. old fashioned oats

1 T. chia seeds

1 c. almond milk

pinch of sea salt

1 banana-thinly sliced

1 T. cacao powder

1 T. peanut butter

sprinkling of dairy free mini chocolate chips (I use Enjoy Life brand)

Bring oats, chia seeds, almond milk and salt to a boil. Reduce heat. Simmer until liquid is absorbed (10 minutes or so), stirring frequently. Stir in bananas, cacao powder and peanut butter until well combined and bananas morph into the oatmeal. Sprinkle with chocolate chips if so desired!

Cocoa powder could easily be subbed for cacao powder. And you could use any type of nut butter for the peanut butter.
