I’m trying to keep up with all the goodies in my weekly CSA box. And that my friends, is easier said than done! Each week I receive a plethora of leafy greens. Therefore, I am forced to become very creative so nothing goes to waste. Just look what I accomplished with my spinach this week! LOVE! LOVE! LOVE!

Mint “Shake”
1 c. almond milk (on other non-dairy milk)
1 c. kale or spinach (or a handful…)
1/8 c. mint leaves (optional)
1 1/2 frozen bananas (I peel these, break into chunks and freeze ahead of time.)
1 t. mint extract
1 T. cacao nibs
Put almond milk and greens in a high speed blender and blend thoroughly. Add bananas, and mint extract. Blend until you reach a “shake” like consistency. More bananas will thicken it, more milk will thin in out. Pour into a glass. Sprinkle with cacao nibs.
